So, if you didn’t know. I swear and love my Bisquick. It gets the job done and it gets the job done right, all the time. As a busy mother, I need short-cuts in my life every now and then and this is one that I swear by.
Stock up on Bisquick if you haven’t already.

Okay, so here’s what you need:

  • 1 (12 ounce) bag frozen broccoli florets, thawed or fresh broccoli (is even better)
  • 1/4 cup of chopped onion
  • 1 cup shredded cheddar cheese
  • 2 large eggs
  • 1/2 cup bisquik biscuit mix
  • 3/4 cup milk
  • 1 dash pepper

1) Thaw broccoli crowns in a 9″ pie plate, layer with onions and then cheese.

2) Preheat oven to 400 degrees Fahrenheit
3) In a large bowl, combine eggs, milk, Bisquix and pepper, beat together well.
4) Pour mixture over broccoli in a spiral motion (otherwise it may take too long to cook in the middle).
5) Bake for 25-35 minutes (a knife poked into the middle should come out clean).

The smell of melting cheese… heavenly!
As you can see, I started eating dinner before hubby got home. Oops!

The crispness and flavor of the cheddar cheese with the broccoli & onions is amazing!

Voila! Cheesy Broccoli Quiche a la Carol.
Don’t be concerned that it’s not high as this quiche is suppose to be lower in height to focus on the flavor and taste of the broccoli and cheese.
