The fist snowfall has officially descended in our town and as pretty as it may be, it is COLD out there!
Today was the perfect day to snuggle close indoors, get the fireplace going, finish decorating our Christmas tree and have a nice warm bowl of soup.

I love a good bowl of soup.  It’s especially great when you’ve got picky little eaters that take shelter at the sight and sound of anything other then macaroni and cheese or spaghetti and meat balls, to not only warm tummies but camouflage ALL THE VEGGIES.  *Mom win dance* Don’t ask me what a mom win dance is exactly but I see it being a combination of a running man, Carlton and Drake Hotline Bling hand throw.

So, while my daughter and son were busily making a mannequin challenge video on my eight year olds iPad (my idea of a Mannequin challenge is Monday mornings pre-coffee watching it brew), I decided to try out our shiny new red appliance that has taken some prime real estate on our counter tops and for good reason.

Blend it, Blend it good!

We recently received the newest Kenmore Pro® Blender from Sears to try out which offers all the funtionality you’d expect from a Vitamix® Blender, at a fraction of the cost and I thought it would be the perfect day to blend up a tasty, healthy and warm soup recipe.
I’ve had my eyes on a Vitamix® for the longest time as I love creating dips, smoothies and soups often with my blender, but with issues having the perfect consistency. Plus it’s just so darn pricey!
I was thrilled to see if this was able to deliver.

Using the blender was ridiculously easy and I was blown away with how quick it was to blend and chop the ingredients inside.  I’ve used it with ice to make a smoothie and was very impressed!  Another amazing feature, particularly when making hot soups – not only does he Kenmore PRO Heavy Duty Blender chop, blend, and purée, but it even HEATS for cozy fall soups in a flash.

My only con is that I found it to be a bit bulky but given what it can do, I let that slide.

And look at this deliciousness.  It was able to make my creamy Cauliflower Soup just right.
With soup recipes, having it able to blend and heat really keeps it to the perfect consistency and enhances the flavours.
With the addition of creamy coconut and infused with pungent flavours like cardamom, cumin, coriander, and turmeric, my cauliflower soup will be a sensational tickle for your tum.



Cauliflower Soup

  1. 1 Tbsp. olive oil
  2. 2 medium yellow onions, diced
  3. 1 bay leaf (don’t forget to pull it out before you blend the soup)
  4. 1 1/4 tsp. ground cumin
  5. 1 tsp. kosher salt
  6. 1 tsp. ground turmeric
  7. 1/2 tsp. ground coriander
  8. 1/8 tsp. ground cardamom
  9. 1/2 tsp of garlic salt
  10. dash of ground black pepper
  11. sprinkling of crushed red pepper flakes
  12. 4 garlic cloves, minced
  13. 4 1/2 cups vegetable broth
  14. 1 large head of cauliflower, roughly chopped to the same size
  15. 1 cup canned coconut milk (I love the Thai brands)
  16. 1 Tbsp. apple cider vinegar
  17. fresh dill (for garnish – optional)
  1. In a large soup pot, heat the oil over medium-low.
  2. Add the onion and the spices, except for the garlic. Saute, stirring occasionally until the onions become translucent, about 10 minutes. Then, add the garlic and saute another few minutes.
  3. Add the vegetable broth and cauliflower and bring to a boil over high heat. Reduce to a simmer and allow to cook for about 15 minutes, until the cauliflower is tender.
  4. Remove from heat and transfer carefully to your Kenmore PRO Heavy Duty Professional Blender. Blend on medium (allowing steam to vent) for a few minutes, until silky and smooth.
  5. Transfer back to the soup pot and stir in the coconut milk and vinegar. Bring back to heat over low, ensuring it doesn’t boil.
  6. Serve hot and topped with fresh dill and ground black pepper, if you like.
