Only a few short days left until we bid farewell to our current home and city we have grown to know and love and start a new journey in a brand new city – ’tis an exciting (albeit very busy) time!  Our packing is 99% complete with only a few minor items left and some cleaning to ensure the new homeowners are welcomed into their new clean home.
Summer is in full swing yet there’s just a few weeks left until the kids are back to school and we are back in routine.
Due to the busyness of our impending move along with trying to ensure I don’t make too much of a mess in the kitchen, admittedly we have been relying more often on dial-a-dinner.  This doesn’t really please me as a mother that would like for my family and I to eat foods that are nutritious yet filling to offer us the fuel we need during these hot summer months.

A few months ago I stocked up on ground turkey during a great sale happening at my local grocers and with all that extra turkey, needed to get creative. I pulled together a delicious and easy recipe that has been my go-to for quickie meals and especially during weeks that I am detoxing yet needed something tasty.

Fusing my love for the flavours of Thai cuisine and low-carb meal options, I decided I needed to add something more to make it a more complete and filling meal so I incorporated Minute Rice’s Premium Instant Whole Grain Brown Rice.  The nuttiness in flavour and added fibre truly was a great inclusion to this dish and most importantly, the kids really love it!  And I love that it’s a quick good for you meal!

If you have 30 minutes, then you have more then enough time to whip up this delicious #WeekdayWin Dinner (or lunch!).  Another great thing about this recipe is that it’s great for advanced meal prep as it taste so good even days after if properly stored & refrigerated.  My husband brings them for his lunches and they carry easily and well.

Thai Turkey and Brown Rice Lettuce Wraps

  1. 1/2 cup cooked Minute Rice Premium Whole Grain Brown Rice
  2. 2 Tablespoons olive oil
  3. 1 cup chopped onion
  4. 3 garlic cloves, minced
  5. 1 lb. ground turkey
  6. 2 teaspoon fresh lime juice
  7. 2 Tablespoons fresh ginger, peeled and grated
  8. 3 Tablespoons soy sauce
  9. 2 teaspoons red curry paste
  10. 1 tsp of fish sauce {you can omit this if you like}
  11. 1 cup fresh cilantro, chopped {plus extra for garnish}
  12. 3 green onions, green part chopped
  13. Salt and pepper to taste
  14. 1 head of Lettuce, washed and separated
  1. Extra fresh cilantro
  2. Unsalted peanuts
  3. Matchstick carrots
  1. 1) Cook the rice according to the package (the Minute Rice Ready to Serve Cups are great for this and only take 1 minute to heat!)
  2. 2) Heat 2 Tablespoons olive oil in a large skillet and add the onion, sautéing for 2 minutes. Add the garlic and and continue to sauté for 2 more minutes.
  3. 3) Add ground turkey, fresh lime juice, ginger, soy sauce, red curry paste and fish sauce and continue cooking until the turkey is browned.
  4. 4) Mix the rice into the turkey mixture along with the fresh cilantro and green onions and stir to combine. Add salt and pepper to taste.
  5. 5) Serve the Thai turkey mixture with crisp lettuce and extra cilantro, matchstick carrots and unsalted peanuts for garnish.
  6. Enjoy!

  1. now this recipe sounds and looks delicious! thank you for the recipe..I am not a fan of cilantro but should be able to omit daughter would love this also!
